Description
Miso is a food rich in proteins and vital enzymes. Unpasteurized artisanal product. To perform its properties, miso must not be pasteurized, because pasteurization inactivates the lactobacilli, causing it to lose much of its beneficial effect. During fermentation, soy proteins are demolished to their individual constituents. This predigestion makes the proteins extremely assimilable. Important is the large quantity of enzymes that stimulate the digestion of proteins, fats and carbohydrates and lactobacilli that create a healthy intestinal bacterial flora.
Ingredients
Soy* (64.6%), water, sea salt, barley flour*, koji (Aspergillus oryzae).

How to use
Add to soups and broths at the end of cooking, without boiling. Or combine a teaspoon of miso and three of tain and a little rice vinegar or lemon, for a sauce suitable for cooked vegetables and salads. Do not add salt.
