How to use
Farinata for 4 people: prepare a batter with the chickpea flour, 2 tablespoons of olive oil and a little water, until the mixture is not too thick; also add a pinch of salt. Pour the batter into the pan and cook for 2 or 3 minutes per side, until the farinata has taken on a golden appearance. Variations: with onion, with courgette flowers or with aromatic herbs, the one with rosemary is typical.
