ORGANIC UMEBOSHI
Description
Organic Japanese Salted Plums. Ume plums are picked while still green and fermented in salt in wooden barrels for a month, along with shiso leaves that give them aroma and flavor. They are then removed from the barrels and left to dry in the sun for a week, thus acquiring the characteristic wrinkled appearance. They are then put back in the barrels to mature for another year. Product suitable for vegans.
Ingredients
Japanese plums* (Prunus mume) 64%, sea salt, shiso leaves* (Perilla frutescens).

How to use
Use in cooking with vegetables and cereals or crushed and pureed to season and prepare sauces. To obtain a macrobiotic drink, place a pitted umeboshi and a teaspoon of shoyu in a cup and add a cup of hot kukicha.
